  1. Which is the best salmon in your store?

    Both Sockeye Salmon and King Salmon are the best salmon because of the flavour and texture. Sockeye Salmon has richer flavour whereas King Salmon is milder in flavour and tender in texture.

  2. What is the difference between the Cold Smoked Salmon and the Cooked Smoked Salmon?

    COLD Smoked Salmon:
    Some people call it Lox. The salmon is smoked for 12 hours at 21~23C. This product is not cooked but ready to eat. Good for serving as an appetizer with capers and onion or on a bagel with cream cheese.
    In our store, this product is kept frozen.
    Its shelf life at room temperature is about 2days.

    COOKED Smoked Salmon:
    The salmon is smoked and fully cooked. This product does not require any refrigeration. Good for serving as sandwichie or crackers with lemon juice and chopped onion or with salad dressing.

  5. I received a package of smoked salmon as a gift. How do I keep it? How do I serve it?

    If your package is COLD Smoked Salmon (Lox, usually pre-sliced package), keep it in the freezer and the package will last for about 3 months. To serve the cold smoked salmon, the best ingredients are capers, lemon juice, onion, and cream cheese / salad dressing.
    If your package is COOKED Smoked Salmon (usually tin foil packaging), no refrigeration is necessary for several years until the package is open. To serve the cooked smoked salmon, the best ingredients are lemon juice, chopped red onion, and cream cheese / salad dressing.

  6. I have a package of smoked salmon which has been kept without refrigeration for awhile. Is it still edible?

    If your package is COLD Smoked Salmon (Lox, usually pre-sliced package) and kept without refrigeration for more than 2 days, we don't recommend you to consume it.
    If your package is COOKED Smoked Salmon (usually tin foil packaging) and the package is not open, it's safe to consume the salmon.

  8. What is the difference between Salmon Jerky and Salmon Candy?

    Salmon Jerky
    The salmon is thinly sliced and smoked slowly over a long period of time, and then dried. The ingredients used for this product are natural salt and sugar. This product can be kept without refrigeration for 7 days depending on the moisture content.

    Salmon Candy (or Indian Candy)
    The salmon is slowly smoked and then soaked in Maple Syrup. Then the salmon is smoked again for another 6 hours and sprinkled with black pepper. This product is more moist and softer than salmon jerky and can be kept without refrigeration for about 2 days. This product should be shipped by courier.

  9. What do people usually use Maple Syrup for?

    Maple Syrup is a natural sweet obtained from Maple Trees. Maple Syrup can be used in tea, coffee, on pancakes, waffles, French toast, ice-cream or hot cereal etc.

  10. What is the difference among extra light, medium and amber maple syrup?

    Extra light is taken at the begining of the season, so it is very pure ad almost a clear color medium is taken after that and about the middle of the season, so this is the most commonly used maple syrup, a bit darker color than extra light. Amber is at the end of the season, this is good for cooking, a bit sweeter than medium and alos darker in color.
